A delicious vegetable salad suitable for a light, yet savoury lunch or dinner. The prime feature of this salad is conjured up by adding lots of tender-crisp vegetables combined with sesame, peanuts and completed with a vinaigrette consisting of soy and Yuzu sauce giving the dish its’ Asian feel. Enjoy warm or set aside to marinate for a few hours. This is an almost year-round climate-friendly recipe since local carrots and Chinese cabbage are in season for most of the year. We assumed that the broccoli would be of Spanish origin which has a minimal impact on the CO2 footprint.

400gChinese cabbage or Pak Choi
150gcarrots
400gbroccoli
4tbsp (60ml)soy sauce
2tbsp (30ml)Yuzu(*) or fresh orange juice
1tbsp (15ml)Tahin or rapeseed oil
25gginger
2tbsp (16g)sesame
40gpeanuts, salted

Instructions

1. Toast sesame seeds in a frying pan without oil until they get a golden brown colour. At the same time bring two litres of water to the boil in a pot.

2. Cut broccoli into strips leaving stalks at around 1 cm and broccoli buds around 2-3 cm in size. Blanch in boiling water for five minutes, remove directly with sieve from water, rinse with ice-cold water and leave to drain.

3. Cut Chinese cabbage (or Pak Choi) in half, then into strips with a width of around 2-3 cm. Finely peel carrots into strips using an environmentally friendly vegetable peeler (does not cut too deep). Blanch for three minutes in boiling water. Spread out onto one half of a paper kitchen towel and dry with the other half.

4. To make the vinaigrette whisk together Tahin with Yuzu and soy sauce. Peel ginger and grate into the vinaigrette. To assemble the salad place vegetables in a bowl, top with sesame seeds, pour some vinaigrette on top of the salad and toss gently.

5. Serve with peanuts and additional soy and Yuzu sauce on the side.
