This autumn-inspired pizza has a base made from delicious polenta, topped with creme fraiche, two kinds of mushrooms, onions and thyme. Polenta is high in carbohydrates to sustain the body through the colder days, onions are rich in potassium and vitamin C, and mushrooms provide fibre, protein, and antioxidants while being kind to the climate.

Ingredients for 2 servings

150gpolenta
7gstock cube
100goyster mushrooms
100gwhite or brown mushrooms
100g crème fraiche
1Stkonion
1gsage
1gthyme
 Salt & Pepper

 

Instructions

1. Add the stock cube to 650ml of water. Bring to the boil and stir in the polenta. Simmer on a low heat for about 2 minutes.

2. Slice the mushrooms and onion and chop the herbs. Spread out the polenta into a pizza shape on a baking tray, then spread the creme fraiche on top. Sprinkle over the mushrooms, onions and thyme and season with salt and pepper.

3. Bake in a pre-heated oven at 220C for around 20 minutes.
